Longtime favorite Uniscali Modern Italian restaurant “in transition”

Devoted fans of Uniscali Modern Italian Restaurant (Uniscali) in Castle Rock were recently stunned and disappointed to find their favorite restaurant had closed its doors.  

“Our lease was up and we chose not to re-sign a longer lease,” said Dennis Dickey, one of Uniscali’s owners.  The trendy and cozy hot spot featured unique menu and drink items that earned its owners and chef rave online reviews from loyal Uniscali foodies.  Uniscali was located at 611 North Wilcox Street in Castle Rock.  It was owned by Dickey and his partners, who also own Union Bistro, another local favorite restaurant located at 3 South Wilcox Street, just a few blocks south of Uniscali.

Dickey added, “We kept the name ‘Uniscali’ and will be featuring some menu items on our new spring menu coming out soon at Union.  We also have plans to open Uniscali in a new location sometime in the future.  We would like to thank all of our family and friends who have supported us over the last seven years and look forward to taking care of them at Union.”  For information about Union An American Bistro, visit www.unionamericanbistro.com or call 303-688-8159.
