Roughly 30 guests gathered at The Country Club at Castle Pines in March to enjoy a High Tea Party featuring lunch and desserts by Pastry Chef Amy Humenchlesbe and an assortment of teas from a local tea company.

The Country Club at Castle Pines and Pastry Chef Amy Humenchlesbe hosted a High Tea Party for members last month.
“We’ve been adding more events to our calendar and trying to focus more on local ingredients and local companies, so featuring Colorado-based Teakoe Tea Supply Co. was a natural choice,” said Humenchlesbe. “Plus, it seemed like a country club thing to do.”

The guests were treated to a three-course menu, starting with traditional scones and biscuits (and Humenchlesbe’s scratch-made clotted cream, which took about 12 hours to make). Next they were served an assortment of tea sandwiches with a beautiful spinach and strawberry salad, followed by petits fours and French macarons.
“We wanted to keep it small and intimate,” said Humenchlesbe, “and now we have a better idea what to expect.” The Club will be hosting a Royal High Tea event geared toward mothers and daughters in May, so check with the Club for details. For those in attendance, the three fun hours of sipping tea and enjoying great company and tea-time delights went by very quickly.
