Mount Fuji, also known as Fujisan, is the tallest mountain in Japan and a sacred site deeply revered by the Japanese people. Recognized by the UNESCO World Heritage Committee as a “sacred place and source of artistic inspiration,” Mount Fuji has been an object of worship since ancient times and has profoundly influenced how Japanese culture views nature. Inspired by this legacy, owner Mi Lin named his hibachi and sushi restaurant Mt. Fuji with the intention of offering Castle Rock residents more than just a meal—he wanted to create an authentic Japanese cultural experience.

After moving to Colorado and making Castle Rock his home, Mi said he immediately felt connected to the community. He described it as a place where “neighbors know each other, families grow together, and community truly matters.” That sense of belonging inspired him to give back. Hospitality has always been close to Mi’s heart because, for him, “taking care of guests is about more than serving food. It’s about making people feel welcomed, comfortable and appreciated.” Those small moments of connection, he said, are what inspire him every day.

Independently owned with inspiration from Mi’s personal vision, Mt. Fuji is located at 4714 Milestone Lane in Castle Rock. The menu showcases a wide range of Japanese flavors, including hibachi steak and shrimp, poke bowls, sushi rolls and more. Guests are also treated to a distinctive dining experience as skilled chefs prepare meals tableside, blending culinary craftsmanship with entertaining traditional hibachi performances.

More than just a restaurant, Mt. Fuji is a gathering place where families celebrate milestones, friends reconnect, and lasting memories are made. Mi is deeply grateful for the ongoing support of the Castle Rock community, sharing that “it truly means everything to me and my family.”

Mi believes that hibachi and sushi naturally bring people together. “Hibachi creates laughter and shared moments, while sushi reflects patience, care and craftsmanship.” These values are deeply important to him and reflected in every dish.

Browsing the menu is an experience itself. Guests can easily create a meal from the appetizers alone, such as the Grilled Hamachi Kama, featuring yellowtail collar grilled with shichimi chili, eel sauce, and ponzu; or the Salmon and Mango Harmony, which pairs fresh salmon slices with mango and ponzu sauce. The Crispy Jalapeño, a jalapeño stuffed with crab meat and cream cheese, then deep-fried and served with spicy mayo and eel sauce, offers bold flavor without overwhelming heat.

With nearly 100 sushi roll options, there is something for every palate. From the classic California Roll to the popular Mt. Fuji specialty Crazy Girl Roll, made with spicy crunchy salmon and topped with spicy tuna, salmon, and yellowtail, each roll is as visually appealing as it is delicious. For lighter fare, the low-calorie Lobster Naruto Roll features lobster tempura wrapped in cucumber with avocado, jalapeño, and crabstick. Mi’s personal favorites include the hibachi filet and several signature rolls, not only for their flavor, but for “the care and pride the chefs put into every dish.”

Seated at a communal table in groups, your personal chef will perform the ancient art of Japanese hibachi.
