Following decades of building some of Douglas County’s most celebrated restaurants through Brinkerhoff Hospitality, Mark and Jo (above) opened Bar Hummingbird in March 2026. Located at 6371 Promenade Parkway and nestled between Savina’s Mexican Kitchen and The Brinkerhoff, Bar Hummingbird is an intimate, sophisticated destination where inspired cuisine and handcrafted cocktails tell the story of their shared passions, family heritage and love of gathering people together.

Brinkerhoff Hospitality has earned a loyal following through acclaimed restaurants including Sierra, Savina’s Mexican Kitchen and The Brinkerhoff. Bar Hummingbird offers something distinctly different – a space that evokes a quieter, more romantic setting designed for conversation, celebration and lingering over curated drinks. The restaurant’s inspiration reaches back to Mark and Jo’s honeymoon in Paris, where they fell in love with the legendary Bar Hemingway inside the Ritz Paris. As they envisioned a restaurant that reflected their own story, they also embraced the symbolism of the hummingbird, an important part of Jo’s Mexican heritage that represents joy, resilience and love. Together, those influences became the foundation for Bar Hummingbird’s unique identity.

The attention to detail begins the moment guests step inside. In the lobby, dazzling crystal chandeliers—each hand-strung by Jo—create an unforgettable first impression. Dramatic lighting and elegant architectural details have quickly made the space a favorite backdrop for photos. Intimate lounge seating sets the atmosphere for cozy conversation, while a live musician creates effortless ambiance. “It is a place to relax, enjoy beautifully crafted drinks and light fare, and experience an elevated bar environment that feels timeless and effortless,” said Mark.

The signature Hummingbird cocktail combines rose gin, pear vodka, elderflower, lemon and apple into a bright, refreshing creation inspired by the hummingbirds that migrate through Castle Rock each year. It is served with a rose garnish, prompting questions of “Oohhhh, what is that beautiful drink?” The Butte Old Fashioned pays tribute to the volcanic butte that gave the town its name, while the Plum Creek Sour honors the historic waterway that guided early settlers through the valley. The Paper Plane salutes those who served our country, including Mark’s grandfather, Sonny Brinkerhoff, and honors courage, adventure and a life well lived – keeping Sonny’s spirit alive with every pour. A classic favorite is the Jo’s Way Make it Spicy Bespoke Margarita that adds fresh serrano for a spicy kick, just the way Jo likes it!

The food menu offers an equally memorable experience with small plates designed to complement the bar program. Favorites include Tomato Bisque with a Pimento Grilled Sandwich, the playful 3 Coast-to-Coast Hot Dogs, Four Mini Cheeseburgers (the cheeseburger your inner child still craves, inspired by Mark) and a classic Lobster Roll.
