Las Fajitas now serving breakfast

What could be better than a great Mexican food restaurant in the neighborhood? How about a great Mexican food restaurant that serves a delicious breakfast menu? Las Fajitas is now serving breakfast Friday through Sunday, from 7 a.m. to 11 a.m.
Owner Alberto Granados said, “Customers have been asking about breakfast; we decided to give it a try and see. If people support us, we will keep serving breakfast and may extend to weekdays.”
The new breakfast menu will include pancakes, French toast, omelets, skillets, steak and eggs, and the traditional huevos rancheros and other Mexican dishes. There will also be occasional specials that are not on the breakfast menu.
The most popular breakfast items are the fajita skillets and fajita omelets, served with country potatoes and a choice of pancakes or toast.
Granados added, “We will be taking suggestions for our menu; if you have something you like, let us know.” Las Fajitas opened its doors in the Castle Pines community in early 2011 and is located at 562 E. Castle Pines Parkway, Suite C-12 in Castle Pines (Safeway shopping center).
