Rodney’s at Castle Pines

Rodney’s already delightful Sunday brunch menu will be enhanced with some extra delicious brunch specials on Mother’s Day. The menu always consists of french toast, breakfast burritos, pancakes, eggs, specialty omelets, Huevos Rancheros, waffles, Eggs Benedict and more. Special chef creations will be offered that day. Drink specials include $2 Mimosas, Bloody Mary’s and Short Screwdrivers. Mini versions of pancakes, eggs and French toast are available for kids. The Bundt Shoppe

Yum! Order a scrumptious Mother’s Day bundt and make her day. The Mother’s Day bundt is topped with a beautiful handcrafted bow, a chocolate heart, and your personal message. An 8” bundt is $30 and serves 10 and a 10” bundt is $40 and serves 20. These special bundts are only available from May 2 to May 7. The Flower Shop at Castle Pines

The Flower Shop at Castle Pines features owner and expert floral designer, Tim Hannon. Tim personally hand selects flowers from local nurseries and he and his team create absolutely lovely bouquets. Beautiful mixed bouquets for Mother’s Day will start at $35. Order early for the best selection. Mother’s Day deliveries will be available Monday, May 2 through Saturday, May 7. La Dolce Vita

La Dolce Vita will host its annual Mother’s Day brunch buffet on Sunday, May 8, from 9:30 a.m. to 2:30 p.m. Sample menu items include frittatas, Eggs Benedict, made-to-order omelets, country potatoes, bacon, sausage, fresh fruit, assorted salads, waffles, smoked salmon, prime rib, muffins and much more. The cost is $22.95 for adults, $8.95 for children, and kids three years old and younger eat free. Coffee is included in the buffet and Mimosa and Bloody Mary specials will be available. Las Fajitas

Las Fajitas, Castle Pines’ newest eatery, located in the Safeway shopping center, will celebrate Cinco de Mayo and Mother’s Day by featuring a very special dish, Chicken Mole. Representing the spirit of Mexico, Chicken Mole is created with a dark brown Mexicansauce made from dried chilies, nuts, spices, vegetables and chocolate seasoning. Little Italy

Moms, do you need a break from the busy weekend? Little Italy is offering two specials from Friday, May 6, through, Monday, May 9. Enjoy a one topping take ‘n bake pizza with large salad for just $9 or a family meal deal (16” one topping pizza, pepperoni or sausage rolls, garlic cheese bread and a large salad) for just $20. The Ridge

With spectacular views and a fabulous buffet, The Ridge is a wonderful spot for Mother’s Day celebrations. This year’s buffet will feature an eggs to order station, prime rib and smoked pork loin carving stations, as well as scrambled eggs, hash browns, ham, sausage, bacon, broiled salmon, waffles, cheese enchiladas, scalloped potatoes and a variety of salads, fruits, rolls and desserts. The cost is $29.95 for adults and $14.95 for children 12 and younger. Champagne, juice and coffee are included.
